Gravy:
Blend coconut for gravy with 3 cups hot water in a liquidizer or food processor. Strain and reserve coconut milk.
Heat oil in a non-stick pan and fry garlic, ginger and onion till brown.
Mix in powdered spices, salt, bay leaves and coconut milk. Cook on low heat for 20 minutes, stirring constantly.
Gently add koftas.
Place curry in a dish, taking care not to break koftas.
Garnish with mint leaves and serve with plain boiled rice or naan.
